The Las Lajas processing mill is responsible for some of the most sought after coffees from Costa Rica. The mill started changing the game with processing methods in Costa Rica back in 2005. 20 years on and Oscar and Francisca Chacón are still perfecting the way they produce the coffees that arrive at their mill.
Roasted for a light espresso, it is best suited for espresso lovers that enjoy a fruit forward cup. With notes of dried mango, honeydew melon and caramel, it's sure to delight any sweet tooth. For those that love desert coffee's try it in a flat white for something like a delicious hot milkshake.

Device - V60/Pourover

Water - 320g
Ratio - 1:16
Method - Add 20g of coffee to pre heated V60 and level gently. Pour 50g of water onto the coffee and swirl gently to soak and distribute the grounds. Bloom for 45 seconds, then pour 100g of water in roughly 20 seconds, then pour the remaining water in 50-60g increments with 10-15 seconds between pours.
